My Favourite Salmon Salad…You’re Welcome!


One of my go to "makes me feel good" salads, is my salmon salad. It's become a fan favourite so I will share it with you and hope you enjoy it as much as I do!

I usually buy a pre-marinated salmon fillet (Maple Chipotle seasoning), but if that isn't available, an unseasoned salmon will work fine as you can always use your own seasoning if you wish. I bake it at 425 degrees for 20-25 minutes. While it is cooking, I prepare my plate with a bed of mixed salad greens. I steam some sprigs of asparagus, cut a few thin slices of red onion and slice half an avocado.

Now the dressing is tricky because I never measure my ingredients, but here is what is in it. I take a handful of fresh cilantro and put it in the magic bullet and blend it with a lemon infused oil. I'm OBSESSED with this oil and use it on everything. I'm lucky that my father visits frequently from Vancouver, where All of Oils is sold (I'm sure they can ship, but if I get a visit with my Dad at the same time, that makes it even better!!). I also throw in the other half of the avocado and a bit of virgin olive oil with a pinch of salt and an Alfoos Mango vinaigrette, also from All Of Oils! I blend it all together until fairly smooth. It won't be too runny, but if you want it to be, add more lemon oil and mango vinaigrette to taste.

Once the fish has cooled slightly, I put a large amount on top of the greens and veg, pour the dressing over and garnish with a generous amount of fresh cilantro. Crack some fresh pepper and VOILA!! This salad will make you love salads again, get your veggies for the day and make you want to come back for more!
