Heirloom Tomatoes Two Ways


I have my go to items that I get when I go grocery shopping. You know, the "youge" (short for usual). But last time I went to buy tomatoes and I came across these lovelies! I thought I'd have to go to a farmer's market at 6 am on a Saturday to find these beauties, but nope! Just at my local Sobey's! I had an instant craving for basil, so of course my mind went Mediterranean. I picked up some fresh basil and feta cheese and with my favourite lemon infused oil in-stock at home, this was going to be nice and easy.

I sliced up each tomato, so that I'd have a colourful presentation and honestly, I wanted to see if the all three colours of tomatoes had a different flavour but they didn’t…it was fun to try something new. I drizzled the lemon oil on top, sprinkled the finely chopped basil and added the feta. Topped it off with some cracked pepper and VOILA! Heirloom Mediterranean Salad.

The next day I had a half of the yellow tomato left over, so I chopped it up and made a fresh salsa, adding fresh cilantro and red onion, with a pinch of sea salt. It was bright and delicious! Full of flavour and a great side to a piece of baked Naan topped with Brie from the oven...I love Mat. Leave food!
